Greek-style new potato salad

I love adding warm potatoes to Greek salad as they soak up the dressing and delicious tomato juices. Give it a try with the recipe below, I hope you love it!

METHOD

  1. To make the dressing, whisk all of the ingredients together in a small bowl and season to taste with salt and pepper.

  2. Chop the feta, vegetables and herbs.

  3. Toss the vegetables, olives, herbs and dressing together in a large serving dish.

  4. Finish by scattering over the feta, sprinkling extra oregano over the top to serve.

INGREDIENTS

2 tbsp olive oil, butter or ghee
200g feta, roughly chopped

Handful cherry tomatoes, halved

1/2 cucumber, half moon sliced or chopped

1 red pepper, chopped

Handful (black kalamata) olives, pitted

½ small red onion, finely sliced

2 big handfuls cooked new potatoes, halved or quartered

Handful fresh parsley, chopped

Oregano garlic dressing

Juice of 1 lemon or 2 tbsp red wine vinegar

4 tbsp extra virgin olive oil, divided

1 tsp dried oregano plus extra to garnish

¼ tsp dijon mustard

½ garlic clove, finely chopped

Sea salt & pepper
