New potatoes with chilli & rosemary butter
This chilli & rosemary butter would also work really well drizzled over griddled veg or fish.
METHOD
Boil the new potatoes in a large pot of salted water for 10-15 minutes until tender. Drain and set aside to steam dry while you make the butter.
Add the butter, spices, rosemary, salt and pepper to a small saucepan on the side burner. Melt the butter then simmer for 1-2 minutes until smelling fragrant. Season with salt and pepper to taste. Pour over the potatoes and toss to coat.
